Breaded Courgette Ciabatta

Breaded Courgette CiabattaI realized that I haven’t posted nearly enough recipes of sandwiches, a type of food that I really love. Also, people tend to assume that vegan sandwiches don’t really exist, or that they’re complicated and nothing special. But that could not be further from the truth – in fact, there are some incredibly delicious vegan sandwiches out there, and many of them are very simple to make. This one might seem difficult, but I assure you that it really takes much less time than you’d think, and is really worth it.

Ingredients (makes 1 ciabatta)

  • 1 ciabatta
  • 1 courgette
  • egg substitute equivalent to 2 eggs
  • breadcrumbs
  • vegan mayonnaise
  • salt
  • pepper

Preparation (20 minutes)

Slice the courgettes length-wise (so you end up with long strips of courgette). Drizzle a very generous amount of olive oil on a pan on medium high heat. Cover the courgette slices in egg substitute, then coat completely in breadcrumbs. Place them on the pan and cook for about 5 minutes, until they become golden brown (or however crunchy you prefer them). When they’re done, set them on a plate, on top of some paper towels to absorb any extra oil, and add salt and pepper. Stick the ciabatta, sliced in half, in a hot oven for about 5 minutes to make it a bit crunchy, then spread a little bit of mayonnaise on both sides. Add the courgette, make it into a sandwich, and cut it in half. 20 minutes and you made yourself a better sandwich than you can buy in most places!
