Celeriac Soup

Celeriac SoupFor this one I have to give pretty much all the credit to my Romanian housemate (yes, the son of the Walnut Mogul of Eastern Europe). I got a celeriac in an Abel & Cole box, and, having never even seen one before, was at quite a loss about what to do with it. Luckily, my housemate knew a recipe, which he showed me how to make and which I have to admit is now one of my favorite soups. 

Ingredients (serves 4 – as starter)

  • olive oil
  • 1 red onion, chopped
  • 2 cloves of garlic, chopped
  • 1 leek, chopped
  • 3 medium-sized potatoes, peeled and chopped
  • 1 celeriac, peeled and chopped
  • 500ml vegetable stock, boiling
  • 75ml oat cream

Preparation (40 minutes)

  1. Drizzle some olive oil in a large non-stick pot on medium high heat and add the onion, garlic, and leek
  2. Stir, then leave for about 5-10 minutes or until everything is nice and golden
  3. Add the potatoes, stir, and leave for about 5 minutes
  4. Add the celeriac, stir, and leave with a lid on the pot for 10 minutes, stirring occasionally
  5. Add the vegetable stock, stir, and leave with the top off for about 20 minutes, stirring occasionally
  6. Add salt and pepper to taste
  7. Using a hand blender, blend everything until it’s completely smooth and devoid of any chunks
  8. Add the oat cream and mix
  9. Remove from the heat, leave to sit for a few minutes, and then enjoy!
