Avocado and Agave Salad
I’m not going to lie, I did somewhat steal this recipe from another website (I thought it was from the New York Times and was going to link to the original, but I can’t seem to find it anywhere anymore). However, I did significantly simplify it since the original recipe had all sorts of ingredients that made it seem much more complicated and I didn’t think were necessary. This salad is truly delicious, easily one of the best salads I’ve ever eaten in my life – and also very healthy and simple to make. The dressing is so tasty it can even be used as a dip!
Ingredients (serves 2)
- 1 avocado
- 1 tbsp agave syrup
- 1 tbsp olive oil
- 2 tsp salt
- 1 tsp pepper
- a bunch of simple lettuce (any kind of simple lettuce you use will do)
- 1/2 red onion, chopped small
Preparation (15 minutes)
Put the avocado, agave syrup, olive oil, salt, and pepper into a blender and blend until smooth. You may need to add some water if it seems to thick to pour and mix properly into the salad (this will depend on what kind of honey you use and how ripe the avocado is). Chop up the lettuce, add the onion, mix it together, and add the avocado and honey dressing. Mix it together and serve! You can, of course, add more stuff to the salad, such as olives or tomatoes – but I find that the dressing is so delicious I wouldn’t want to obscure the taste.

To be honest I think considering honey not vegan is pretty ridiculous… They’re bees, and they’re not being harmed in any way.

That argument sounds exactly like what omnivores say. Do your research; bees are harmed for humans to farm them and take their food. Even if in some hypothetical world they weren’t harmed, they can’t consent, which makes it ethically wrong. However, it’s pretty simple: are bees animals or plants? Honey is an animal product therefore not vegan.

Honeybee hives are routinely culled after two years when their production begins to drop, rather than the three or four years queens will live naturally. Supporting honey without knowing the source is almost certainly supporting the harming of bees.
