Penne alla VodkaEvery time I ask one of my friends if they want vodka pasta for the first time they think I’m joking, and are extremely surprised when I tell them I’m being serious. However, it’s really not that special – just a regular tomato sauce with some oat cream and a splash of vodka. Still, its always an easy way to entertain whoever it is you’re cooking for – and, of course, it also tastes great.

Ingredients (serves 2)

  • 1 small white onion, chopped
  • 2 cloves of garlic
  • 100g cherry tomatoes, chopped
  • 250g peeled plum tomatoes
  • 1 glass of vodka (preferably good, like Grey Goose)
  • 100g passata
  • 100ml oat creat
  • 400g penne
  • salt
  • pepper
  • olive oil

Preparation (40 minutes)

Drizzle some olive oil on a pan and put it on medium heat. Wait 2 minutes, then add the onion and the garlic. Mix it all around for about 7 minutes, then add the cherry tomatoes. Stir it all together, then leave it for 3 minutes. Now turn the heat to maximum and add the vodka. Leave until about 80% of it has evaporated, then add the peeled plum tomatoes, passata, salt, and pepper, stir, then leave to simmer for 20 minutes. In the meantime, bring a large pot of water to boil. Add a handful of salt, then after 2 minutes add the penne. While the pasta is cooking, add the oat cream to the sauce and turn it up to maximum heat, stirring often. After the pasta has been cooking for about 7 minutes, taste the pasta, after about 9 it should be done. Drain it, put it in a bowl, and add the sauce. Enjoy!
