Organic Pepper and Carrot Salad

I had an incredible surprise from my mom last week: a large Abel & Cole fruit & veg box! For those of you that don’t know, Abel & Cole deliver high quality organic fruit and vegetables to your door – and their organic food tastes much better than anything you’ll find in a regular supermarket. Anyway, I wanted to try as many things out as soon as possible, and so ended up making this delicious salad.

Organic Pepper and Carrot SaladIngredients (serves 4)

  • 1 red bell pepper
  • 1 head of lettuce, chopped
  • 1 head of iceberg lettuce, chopped
  • 1 carrot, grated
  • 3 vine tomatoes, chopped
  • ½ white onion, sliced
  • olive oil
  • salt
  • pepper

Preparation (20 minutes)

Before you start, preheat the oven to 200°C. When it’s warm, put in the bell pepper and leave it there for about 20 minutes, or until the skin starts to turn black (it doesn’t matter if it looks a bit burnt because the skin is coming off later anyway). In the meantime chop, grate, and slice the rest of the ingredients and toss them into a large bowl. When the pepper is ready, peel off the peel (you should be able to do this easily with your fingers), chop it up and throw it in the bowl. Add generous amounts of olive oil, salt, and pepper, then serve, eat, and enjoy!
