Tomato and Cream Cheese Sandwich

I know this is pretty similar to the sandwiches I made a few weeks ago, but these ones are 1) a classic, 2) delicious, and 3) reflect the fact that I seem to have less and less free time and my time spent in the kitchen is therefore suffering. That said, these are the classic sandwiches I eat pretty much all summer in Italy – they make the perfect snack to bring along to the beach, or anywhere really! 

Tomato and Cream Cheese PaniniIngredients (makes 2 sandwiches)

  • Bread for two sandwiches (whichever kind you like best, anything will do)
  • 2 tomatoes
  • 10 leaves of fresh basil
  • vegan cream cheese
  • olive oil
  • salt
  • pepper

Preparation (10 minutes)

Toast the bread, and, in the meantime, slice the tomatoes. Spread a nice amount of cream cheese on one side of the bread, and then add the tomatoes and basil. Drizzle with a little olive oil, add salt and pepper to taste, and enjoy!
